Ochratoxin A is produced in moderate climates by Penicillium strains (P. verrucosum) on grains and in warmer parts of the world by several species of Aspergillus (A. ochraceus, A.sulphureus etc.) on a much wider range of food commodities (cereals, wine, grape juice and coffee). Ochratoxin A is a relatively stable molecule that can pass unchanged through the food chain. It can be found in meat and meat products produced from animals fed on contaminated feed.
